  • Early mornings on the farm.
    Sunrises and sunsets are just spectacular in the fall.
    We have been busy this summer, and now with cooler weather and yard work slowing down, I would like to get back into posting!
    To start off, I want to share one of our favorite fall cake recipes, using our flour and the last of the garden zucchini. Enjoy!

    Zucchini Coffee Cake

    Ingredients:
    1 Cup All purpose Flour
    1 Cup white Spelt Flour
    1 Cup Brown Sugar
    2 1/2 tsp cinnamon
    ½ tsp baking powder
    1 tsp sea salt
    10 tbsp melted butter
    2 large eggs, room temperature
    ½ cup milk
    ½ tsp vanilla
    1 ½ cups shredded zucchini
    ½ cup raisins (optional)

    TOPPING:
    ½ cup brown sugar
    ½ and 2 tbsp all purpose flour
    1 tsp cinnamon
    4 tbsp butter, melted

    1. Preheat oven to 350 F. Grease a 8x10 baking dish (or makes 12 muffins).
    2. In a large bowl, whisk together flour, brown sugar, cinnamon, baking soda, baking powder and salt until smooth. Mix in melted butter, eggs, milk and vanilla extract. Fold in shredded zucchini and raisins. Pour the batter into the cake pan.
    3. To make the topping, in bowl, combine flour, brown sugar and cinnamon. Add the melted butter; stir until moistened and slightly clumpy. Sprinkle evenly over the batter.
    4. Bake for about 35 minutes or until golden and set and toothpick comes out clean. Muffins for 24-26 minutes. Optional: dust the top with cinnamon.

We talked flour and we met very enthusiastic owners who right away placed our flours on their shelves!
They also will start selling  Living lettuce from our Greenhouse under the name NexlevelGreens. Ltd.

Our mill is not certified organic, so we will mark our products as organic grown.
Even our white and all purpose flour are now milled with the organic grain!

Our flour is made from the whole kernel and contains no additives!!

We enjoyed a couple days off in the mountains and are happy to be back.
Yesterday we were able to start up the combines and we harvested the Spelt crop.

All our crops we grew this year are certified organic!

Instead of closing the mill next week we decided to go camping this week in the hope we can start the combine next week!

Since we have our crops grown organic, the seed cleaner needs to clean the facility before handling our crops, this is scheduled for September 2025
