Today was very exciting! My husband Case, fixed up a small seed cleaner and got it running and cleaned some Red Fife seed for me, from our new 2017 crop! I started the mill right away to see what kind of flour I would get and did some research what kind of recipes are around for Red Fife. I found the basic information about this special wheat on : Lime leaves and Taste buds website. it was very interesting to read! I also found a recipe there for red fife loaf and a recipe on an organic site. Tomorrow I hope to bake a loaf of two! I also milled some flour and will bring that along to the farmers market! Saturday will be the last farmers market for this season. I will miss meeting my customers and all the people who stop by and talk with me. One of my customers told me that using 100% spelt flour is possible. Add 1 tbsp tapioca starch for every cup of flour you use and the dough will hold better! I tried making my cookies and added cornstarch instead ( I don't have tapioca ) and it worked . The cookies didn't "flop" ! So thank you for sharing your recipes and ideas with me!
